Ahhhh...With Valentine's Day right around the corner....LOVE IS IN THE AIR. Or.....lots of chocolate and lots of red and pink stuff. This recipe isn't chocolate but it does have a lot of PINK!!! This recipe is super simple and quick to make. You won't waste any of your precious "Love Day" time. Simple ingredients but a delicious taste. The pink cream gets its coloring from beets!!! How fun is that!   The cream is perfect with the vegan cream cheese but I have ... Continue Reading

Vegan German Spaetzle

OKTOBERFEST!! Generally, this 3 week long party is filled with lots and lots of beer and lots of German food which are by tradition....anti-vegan. I had hope that I would be able to recreate a traditional dish for Oktoberfest without the usual "cheats" of seitan or tempeh for meat. With my luck, these delicious dumplings kept popping up on all my searched. The ingredients were extremely simple and the customization was endless so I knew I had to make it. The main ingredients other than ... Continue Reading

Mushroom Hummus

I'm BAAAACK!!!! After a delightful volunteer trip to Costa Rica, I am back and ready to be dry and not wet, do physical exercise instead of manual labor and of course COOK FOR MYSELF!! Although, I loved spending my days feeding monkeys, birds and pigs, I was SOOOOO over cleaning up bird, monkey and pig poop. HEHE! The food in Costa Rica was very vegan friendly. I mean...you really can't go wrong with rice, beans and plantains. Plus.....all the bananas and papayas my stomach can handle!!! ... Continue Reading

Crunchy Vegan Tuna Salad

My childhood consisted of a lot of tuna sandwiches. It was cheap and easy and I actually enjoyed the taste. My mom always seemed to make the best tasting tuna sandwiches. They were always crunchy and super delicious. Minimally seasoned but tasted like perfection on my adolescent tongue. During my Figure Competition days, my consumption of tuna was still high because....well...tuna is low in calories and high in protein and super cheap. My main concern about food was just those two check ... Continue Reading

Mediterranean Quinoa Stuffed Mini Peppers

Sweet....Mini....Baby....Bitesize..... Whatever you call these little nuggets, they not only are perfectly savory and sweet but they are super convenient. Perfect for a snack on the go or even a snack "I'm watching netflix and too lazy to make something". Either way, I am kind of obsessed with Sweet Mini Peppers.  Generally, they are my go to add of bright orange, red, or yellow color to my salads but I have been known to nosh on them in between meals. Now, stuffed peppers in general are ... Continue Reading

Avocado Mango Naan Pizza

I have been swimming in Mangos....because it's Mango season and they are ridiculously cheap! I am not complaining... but... I may or may not have gotten a little bored of just raw mango or mango oatmeal or mango ice cream or Carrot Mango Pudding Tarts. PSYCH!!! I could never get bored of this delicious fruit but I did want to venture out into the savory mango dishes. So after pondering for a while, I decided that a PIZZA would be perfect to try out my lovely mango...Savory Style! So ... Continue Reading

Blueberry & Beet Bruschetta

This recipe was semi inspired by a recent trip to the Mad City Vegan fest and semi inspired by my love of blueberries that are currently in season.  At the Vegan fest my mom and I got to watch Chef Dave from Lilliana's and Charlie's restaurant in Madison, Wisconsin do a live cooking demo. Not only was this a cooking demo...it was a vegan cooking demo. We got FRONT ROW seats because I didn't want to miss one second. I learned soooooo much.....and I laughed even more. He was truly good enterta... Continue Reading

Lentilettes

I think "Faux" meatballs are pretty cool. Cute, (usually) flavor packed and perfectly portioned. Which means you can gobble up 15 without noticing lol. Veggie meatballs and their close cousin falafels are a great addition to any meal. Eat them as an appetizer with a marinara sauce or mix it in the sauce and plop them on top a bed of garlic spaghetti. PERFECTION! Honestly...the meal combinations are endless. There are several ways to make veggie meatballs but I found that the method ... Continue Reading

Smoky Sweet Potato and Kale Dip

Without a doubt barbeque is one of the most recognizable flavors in the world. Smoky and sweet with a unique kick to the taste buds. It sends memories of burgers, picnic tables, pool parties, cook outs racing through peoples heads. In general, barbeque is a reminder of good times with friends or family. Usually BBQs are full of grilled "meat" and other unhealthy stuff. For us vegans though...we get creative with grilled veggies, fruits, tofu, homemade veggie burgers or even try the new ... Mini Seitan Pita Pizzas

So I wanted to do a recipe on making seitan....and I did...but seitan isn't pretty to photograph or display unless you do something with it. So....Mini Seitan Pita Pizzas were produced on a whim! These guys are super delicious, quick and for sure would be a party favorite. They were definitely a favorite when I made them at my Mom's. Grandma was sooooooo surprised that these were all vegan and the seitan was not "meat". But back to the original recipe....Seitan. Kinda looks like ... Continue Reading
