Tofurniki (Russian Vegan Syrniki or Cheese Pancakes)

Out of all the delicious Russian dishes I remember from childhood, I must say that Syrniki are by far my favorite. They are pancakes on steroids...and I LOVE PANCAKES!!! Why are they on "steroids"? Because they are heartier and creamier and much more delicious!!! Everyone has had pancakes up the wazooo. Blueberry....smores....chocolate chip....well revamp your pancake game and try something RUSSIAN!!! Syrniki translates to cheese pancakes. Generally, these beauties are made with some ... Fluffernutter Popcorn Balls

Pop. Pop. Pop pop POPOPOPOPOPPO!!!!! I have long been a fan of popcorn. It is my go to snack even when I am not in the movies. Of course, popcorn tastes better with tons of butter but I try and limit that version EVEN if it's now vegan butter lol. I do however love sprinkling tons of nutritional yeast on top to give the popcorn an addicting cheesy flavor. My coworker recently brought me up a souvenir popcorn kernal bag from South Carolina. SOOOOO tempting....but I also had a ... Continue Reading

Sweet Potato Bread Pudding with Bananas Foster Sauce

The first time I tried Bread Pudding, I fell in love. It is such a simple dessert but absolutely delicious. I remember, I was at an Italian restaurant a decade ago and I saw it on the dessert menu. This type of dessert is not common for Russians so of course I have never had the opportunity to try it. I decided on a whim to go for it because I did recollect hearing about it. I never had an interest in trying it because well it doesn't "sound" like the best dessert you could have. I ... Continue Reading

5 Spice Chocolate Pumpkin Granola Bark

Inspired by Trader Joe's Organic Pumpkin Spice Granola Bark, this is my version adapted and of course...enhanced. My mom had sent me a picture of TJ's version on instagram and I was immediately in awe. I HAD TO TRY IT!!! I love granola....like....LOVEEEE and well duh...CHOCOLATE who doesn't love that. I knew these would be gone before I had a chance to bring them home. So I solved that problem by creating a homemade version. Same spicy flavor...Kicked it up a Notch! Taking a note ... Chocolate Thumbprint Cookies

In general, chocolate is hard to say no to and these soft and chewy cookies will grab you before you even have a chance to escape. The cookie portion is soft and tender on the inside with a gentle but firm crust. The Coconut Cashew filling finishes off the ensemble with a sweet flavor resembling an Oreo cookie cream. All vegan but without the added preservatives. This "open faced" Oreo cookie will be a hit in your household!   Continue Reading

Grape Dumplings

Out of the blue, I really wanted to research Native American cuisines. Stereotypical views would just assume their dishes are mainly just corn and squash. I soon found that it is so much more. Native American dishes are not featured much in today's restaurants. We all know Italian, Mexican and Greek but Native American.....nope. It is very surprising as this culture is right here in its original home. Of course this topic can be disputed at length for oppression and other negative realities ... Continue Reading
Dark Chocolate and Cherry Parfait with Granola and Cherry Compote

Dark Chocolate & Cherry Parfait

I love cherry season! When these guys come into season, I load up as much as possible and binge till my little belly is popping. Actually....I basically do that to all fruits when they come into season because....well...I love FRUIT!! I wanted to create a dish that would incorporate my love of cherries and my love of chocolate....BUT still be sort of healthy. Yea....chocolate doesn't usually scream healthy but when you add some good old oatmeal and fruit then it's okay right??? ... Continue Reading

Blueberry & Beet Bruschetta

This recipe was semi inspired by a recent trip to the Mad City Vegan fest and semi inspired by my love of blueberries that are currently in season.  At the Vegan fest my mom and I got to watch Chef Dave from Lilliana's and Charlie's restaurant in Madison, Wisconsin do a live cooking demo. Not only was this a cooking demo...it was a vegan cooking demo. We got FRONT ROW seats because I didn't want to miss one second. I learned soooooo much.....and I laughed even more. He was truly good enterta... Continue Reading
