Spicy Carrot Carnitas

It may be in the middle of April Showers but it is never to early to celebrate CINCO DE MAYO!!!! Mexican or Spanish food is always a winner for dinner in my house. These SPICY CARROT CARNITAS have now added another plant based Mexican dish that I can enjoy on a regular basis. Full of Beta-Carotene Rich Carrots and slow cooked to perfection in an aromatic bath of chipotle peppers and taco seasoning. The citrus rich orange juice adds a sweet but savory flavor to the carrots which is only ... Continue Reading

Shaved Brussels Sprout Salad with Pumpkin Tahini Dressing

I love dark and leafy greens but winter time calls for a different salad filler. BRUSSELS SPROUTS! Some people cringe at the name but I on the other hand....SALIVATE!! They are so delicious and nutritious. If you don't like them then you most likely haven't had them prepared well. Roast, Saute, Fry, Bake.... My personal favorite form of enjoying sprouts is shaved sprouts in a hearty salad. When these little mini cabbages are shaved they create a different salad ambiance. One that is ... Continue Reading

Chickpea Minestrone

The rain...the cold...the darkness. Those things all scream "SOUP WEATHER" to me. I personally love soup. Whether its creamy and thick or light and brothy, full of veggies or just one delicious ingredient focus, the overall consensus for my stomach is the more soup the better. Although, the cold weather is icky it serves as the perfect reason to have more soup in your life. Another reason I love soups in the winter is because I can pack in all those veggies. I value and care for my immune ... Continue Reading

Easy Lentil Buckwheat Pilaf

Although I love creating a fancy shmancy hard to prepare meals, most of my go-to meals are quick, simple and consist of ingredients that are always in my pantry. Buckwheat is a staple in the Russian household. It is definitely our go to "grain". I forgot about how much I loved Buckwheat when I was away at college but I reconciled my relationship a couple of years ago. It isn't very calorie dense but it is packed full of nutrition. The other brother in this recipe is the highly sought a... Continue Reading

Vegan German Spaetzle

OKTOBERFEST!! Generally, this 3 week long party is filled with lots and lots of beer and lots of German food which are by tradition....anti-vegan. I had hope that I would be able to recreate a traditional dish for Oktoberfest without the usual "cheats" of seitan or tempeh for meat. With my luck, these delicious dumplings kept popping up on all my searched. The ingredients were extremely simple and the customization was endless so I knew I had to make it. The main ingredients other than ... Continue Reading

Mushroom Hummus

I'm BAAAACK!!!! After a delightful volunteer trip to Costa Rica, I am back and ready to be dry and not wet, do physical exercise instead of manual labor and of course COOK FOR MYSELF!! Although, I loved spending my days feeding monkeys, birds and pigs, I was SOOOOO over cleaning up bird, monkey and pig poop. HEHE! The food in Costa Rica was very vegan friendly. I mean...you really can't go wrong with rice, beans and plantains. Plus.....all the bananas and papayas my stomach can handle!!! ... Continue Reading

Crunchy Vegan Tuna Salad

My childhood consisted of a lot of tuna sandwiches. It was cheap and easy and I actually enjoyed the taste. My mom always seemed to make the best tasting tuna sandwiches. They were always crunchy and super delicious. Minimally seasoned but tasted like perfection on my adolescent tongue. During my Figure Competition days, my consumption of tuna was still high because....well...tuna is low in calories and high in protein and super cheap. My main concern about food was just those two check ... Continue Reading

Avocado Mango Naan Pizza

I have been swimming in Mangos....because it's Mango season and they are ridiculously cheap! I am not complaining... but... I may or may not have gotten a little bored of just raw mango or mango oatmeal or mango ice cream or Carrot Mango Pudding Tarts. PSYCH!!! I could never get bored of this delicious fruit but I did want to venture out into the savory mango dishes. So after pondering for a while, I decided that a PIZZA would be perfect to try out my lovely mango...Savory Style! So ... Continue Reading

Immune Boosting Salad

Blah... As I child, I was sick often. My immune system was terrible and I basically lived from cold to cold. My family attributed my weakened immune system to the proximity of my place of birth (Minsk, Belarus) to the Chernobyl Power Plant Explosion. No direct radiation poisoning, we assume the affected crops indirectly caused several of my health problems. As a result of my immune system, I have spent the beginning portion of my adult life strengthening it to the levels of wolverine or ... Continue Reading

Blueberry & Beet Bruschetta

This recipe was semi inspired by a recent trip to the Mad City Vegan fest and semi inspired by my love of blueberries that are currently in season.  At the Vegan fest my mom and I got to watch Chef Dave from Lilliana's and Charlie's restaurant in Madison, Wisconsin do a live cooking demo. Not only was this a cooking demo...it was a vegan cooking demo. We got FRONT ROW seats because I didn't want to miss one second. I learned soooooo much.....and I laughed even more. He was truly good enterta... Continue Reading
