Spicy Carrot Carnitas

It may be in the middle of April Showers but it is never to early to celebrate CINCO DE MAYO!!!! Mexican or Spanish food is always a winner for dinner in my house. These SPICY CARROT CARNITAS have now added another plant based Mexican dish that I can enjoy on a regular basis. Full of Beta-Carotene Rich Carrots and slow cooked to perfection in an aromatic bath of chipotle peppers and taco seasoning. The citrus rich orange juice adds a sweet but savory flavor to the carrots which is only ... Continue Reading

Creamy Mushroom Potato Casserole

I have been on a potato kick lately. Sweet potatoes, yellow potatoes, red potatoes, purple potatoes....fried, baked, boiled, mashed...hashbrowns, fries, and pureed. ENDLESS VERSIONS AND COLORS AND SHAPES! Part of the reason I have been part of the potato party was because I wanted to semi partake in the "potato challenge". The other reason is that I am Russian and I LOVE potatoes!!! Anywhoo... I wanted to make the ultimate potato casserole that was hearty, cheesy, creamy and used ... Continue Reading

Shaved Brussels Sprout Salad with Pumpkin Tahini Dressing

I love dark and leafy greens but winter time calls for a different salad filler. BRUSSELS SPROUTS! Some people cringe at the name but I on the other hand....SALIVATE!! They are so delicious and nutritious. If you don't like them then you most likely haven't had them prepared well. Roast, Saute, Fry, Bake.... My personal favorite form of enjoying sprouts is shaved sprouts in a hearty salad. When these little mini cabbages are shaved they create a different salad ambiance. One that is ... Continue Reading

Sweet Potato Bread Pudding with Bananas Foster Sauce

The first time I tried Bread Pudding, I fell in love. It is such a simple dessert but absolutely delicious. I remember, I was at an Italian restaurant a decade ago and I saw it on the dessert menu. This type of dessert is not common for Russians so of course I have never had the opportunity to try it. I decided on a whim to go for it because I did recollect hearing about it. I never had an interest in trying it because well it doesn't "sound" like the best dessert you could have. I ... Continue Reading

Easy Lentil Buckwheat Pilaf

Although I love creating a fancy shmancy hard to prepare meals, most of my go-to meals are quick, simple and consist of ingredients that are always in my pantry. Buckwheat is a staple in the Russian household. It is definitely our go to "grain". I forgot about how much I loved Buckwheat when I was away at college but I reconciled my relationship a couple of years ago. It isn't very calorie dense but it is packed full of nutrition. The other brother in this recipe is the highly sought a... Continue Reading

Vegan German Spaetzle

OKTOBERFEST!! Generally, this 3 week long party is filled with lots and lots of beer and lots of German food which are by tradition....anti-vegan. I had hope that I would be able to recreate a traditional dish for Oktoberfest without the usual "cheats" of seitan or tempeh for meat. With my luck, these delicious dumplings kept popping up on all my searched. The ingredients were extremely simple and the customization was endless so I knew I had to make it. The main ingredients other than ... Continue Reading

Crunchy Vegan Tuna Salad

My childhood consisted of a lot of tuna sandwiches. It was cheap and easy and I actually enjoyed the taste. My mom always seemed to make the best tasting tuna sandwiches. They were always crunchy and super delicious. Minimally seasoned but tasted like perfection on my adolescent tongue. During my Figure Competition days, my consumption of tuna was still high because....well...tuna is low in calories and high in protein and super cheap. My main concern about food was just those two check ... Continue Reading

Mediterranean Quinoa Stuffed Mini Peppers

Sweet....Mini....Baby....Bitesize..... Whatever you call these little nuggets, they not only are perfectly savory and sweet but they are super convenient. Perfect for a snack on the go or even a snack "I'm watching netflix and too lazy to make something". Either way, I am kind of obsessed with Sweet Mini Peppers.  Generally, they are my go to add of bright orange, red, or yellow color to my salads but I have been known to nosh on them in between meals. Now, stuffed peppers in general are ... Continue Reading

Lentilettes

I think "Faux" meatballs are pretty cool. Cute, (usually) flavor packed and perfectly portioned. Which means you can gobble up 15 without noticing lol. Veggie meatballs and their close cousin falafels are a great addition to any meal. Eat them as an appetizer with a marinara sauce or mix it in the sauce and plop them on top a bed of garlic spaghetti. PERFECTION! Honestly...the meal combinations are endless. There are several ways to make veggie meatballs but I found that the method ... Continue Reading

Lemon Pea Buddha Bowl

I love making random food bowls...more esthetically named "Buddha Bowls". They are such a great way to use up leftover food knowing it will still somehow end up tasting great lol. This particular buddha bowl has a unique mixture of a double dose of "pea"....yea....chickpeas and yellow split peas. Flavored with the double dose of lemons, this bowl is basically a multi-vitamin. I love the chickpea/pea mix because it is very hearty and filling but when paired with the raw kale salad it ... Continue Reading
