Tofurniki (Russian Vegan Syrniki or Cheese Pancakes)

Out of all the delicious Russian dishes I remember from childhood, I must say that Syrniki are by far my favorite. They are pancakes on steroids...and I LOVE PANCAKES!!! Why are they on "steroids"? Because they are heartier and creamier and much more delicious!!! Everyone has had pancakes up the wazooo. Blueberry....smores....chocolate chip....well revamp your pancake game and try something RUSSIAN!!! Syrniki translates to cheese pancakes. Generally, these beauties are made with some ... Vegan German Spaetzle

OKTOBERFEST!! Generally, this 3 week long party is filled with lots and lots of beer and lots of German food which are by tradition....anti-vegan. I had hope that I would be able to recreate a traditional dish for Oktoberfest without the usual "cheats" of seitan or tempeh for meat. With my luck, these delicious dumplings kept popping up on all my searched. The ingredients were extremely simple and the customization was endless so I knew I had to make it. The main ingredients other than ... Continue Reading

Caramel Pecan Monkey Bread Rolls

I am not going to lie. These are naughty. Very naughty. Santa already knows these won't be getting any presents.... The inspiration for this recipe came from a coworker. She is a true Southern Belle and loves her some pecans and biscuits. It was her birthday, so I really wanted to kill some of her home-sickness with a Pecan explosion. This monkey bread was the result. Packed with tons of pecans and a natural caramel from from dates it puts the usual monkey bread or cinnamon roll to ... Continue Reading

Chocolate Thumbprint Cookies

In general, chocolate is hard to say no to and these soft and chewy cookies will grab you before you even have a chance to escape. The cookie portion is soft and tender on the inside with a gentle but firm crust. The Coconut Cashew filling finishes off the ensemble with a sweet flavor resembling an Oreo cookie cream. All vegan but without the added preservatives. This "open faced" Oreo cookie will be a hit in your household!   Continue Reading

Grape Dumplings

Out of the blue, I really wanted to research Native American cuisines. Stereotypical views would just assume their dishes are mainly just corn and squash. I soon found that it is so much more. Native American dishes are not featured much in today's restaurants. We all know Italian, Mexican and Greek but Native American.....nope. It is very surprising as this culture is right here in its original home. Of course this topic can be disputed at length for oppression and other negative realities ... Continue Reading

Chocolate Brownie Crackers

I take my dessert seriously. To be specific...I take my weekend ice cream bowls very seriously. I work out and I eat clean whole plant based food 90% of the time but I treat myself to extravagant desserts on the weekends.  I blend up a big bowl of frozen banana ice cream....(sometimes I add cocoa for chocolate flavor) and I literally....go bananas with toppings. Some of my favorite toppings are chopped dates, peanuts, almond butter, cookies, granola, craisins and cereal......hmmmm. ... Continue Reading

Carrot Mango Pudding Tarts

I say the more carrots in your life the better... This recipe was inspired by the Indian Dessert "Gajar Halwa" which is a Carrot Pudding. In general this dessert is vegetarian so it does use milk and butter so I took it upon myself to capture the essence of the dish but make it completely plant based. One of the benefits of using carrots in a dessert is that carrots have a sweet taste to them individually so they do not need to add a lot of additional sugar. Also, by pairing the ... Russian Vegan Pelmeni

To celebrate Mother's day, I decided to include Momma Irena in my Cardio with Carrots hijinks. I give a lot of praise to my mom. She has undergone A LOT in her life.....and I sure didn't make it easier with my teenage and young 20's drama and problems. Somehow...she survived the mess of decade I put her through. So it was a great pleasure to bond with her over some cooking and fitness....both things WE LOVE to do but not in the same fashions lol. She loves her zumba and I love my deadlifts ...
