The first time I tried Bread Pudding, I fell in love.
It is such a simple dessert but absolutely delicious. I remember, I was at an Italian restaurant a decade ago and I saw it on the dessert menu. This type of dessert is not common for Russians so of course I have never had the opportunity to try it. I decided on a whim to go for it because I did recollect hearing about it. I never had an interest in trying it because well it doesn't "sound" like the best dessert you could have.
Inspired by Trader Joe's Organic Pumpkin Spice Granola Bark, this is my version adapted and of course...enhanced.
My mom had sent me a picture of TJ's version on instagram and I was immediately in awe. I HAD TO TRY IT!!! I love granola....like....LOVEEEE and well duh...CHOCOLATE who doesn't love that. I knew these would be gone before I had a chance to bring them home. So I solved that problem by creating a homemade version.

This recipe was inspired by the Indian Dessert "Gajar Halwa" which is a Carrot Pudding. In general this dessert is vegetarian so it does use milk and butter so I took it upon myself to capture the essence of the dish but make it completely plant based.
