Creamy Mushroom Potato Casserole

I have been on a potato kick lately. Sweet potatoes, yellow potatoes, red potatoes, purple potatoes....fried, baked, boiled, mashed...hashbrowns, fries, and pureed. ENDLESS VERSIONS AND COLORS AND SHAPES! Part of the reason I have been part of the potato party was because I wanted to semi partake in the "potato challenge". The other reason is that I am Russian and I LOVE potatoes!!! Anywhoo... I wanted to make the ultimate potato casserole that was hearty, cheesy, creamy and used ... Continue Reading

Shaved Brussels Sprout Salad with Pumpkin Tahini Dressing

I love dark and leafy greens but winter time calls for a different salad filler. BRUSSELS SPROUTS! Some people cringe at the name but I on the other hand....SALIVATE!! They are so delicious and nutritious. If you don't like them then you most likely haven't had them prepared well. Roast, Saute, Fry, Bake.... My personal favorite form of enjoying sprouts is shaved sprouts in a hearty salad. When these little mini cabbages are shaved they create a different salad ambiance. One that is ... Continue Reading

Chickpea Minestrone

The rain...the cold...the darkness. Those things all scream "SOUP WEATHER" to me. I personally love soup. Whether its creamy and thick or light and brothy, full of veggies or just one delicious ingredient focus, the overall consensus for my stomach is the more soup the better. Although, the cold weather is icky it serves as the perfect reason to have more soup in your life. Another reason I love soups in the winter is because I can pack in all those veggies. I value and care for my immune ... Continue Reading

Vegan Thanksgiving Nachos

A lot can be said about Thanksgiving, some good and some bad. For the majority it is a National "Holiday" where people enjoy the day off with lots of food, family and friends. This year however, will be a little different celebration. To me, Thanksgiving is no longer a "normal" holiday it is actually my Vegan Anniversary. Yes, one year ago was my last small sliver of meat. WOOOHOOO!! Yes, I am alive and thriving! This year we will be having an all Vegan Thanksgiving and it will be ... Continue Reading

Easy Lentil Buckwheat Pilaf

Although I love creating a fancy shmancy hard to prepare meals, most of my go-to meals are quick, simple and consist of ingredients that are always in my pantry. Buckwheat is a staple in the Russian household. It is definitely our go to "grain". I forgot about how much I loved Buckwheat when I was away at college but I reconciled my relationship a couple of years ago. It isn't very calorie dense but it is packed full of nutrition. The other brother in this recipe is the highly sought a... Continue Reading

Mushroom Hummus

I'm BAAAACK!!!! After a delightful volunteer trip to Costa Rica, I am back and ready to be dry and not wet, do physical exercise instead of manual labor and of course COOK FOR MYSELF!! Although, I loved spending my days feeding monkeys, birds and pigs, I was SOOOOO over cleaning up bird, monkey and pig poop. HEHE! The food in Costa Rica was very vegan friendly. I mean...you really can't go wrong with rice, beans and plantains. Plus.....all the bananas and papayas my stomach can handle!!! ... Continue Reading

Mediterranean Quinoa Stuffed Mini Peppers

Sweet....Mini....Baby....Bitesize..... Whatever you call these little nuggets, they not only are perfectly savory and sweet but they are super convenient. Perfect for a snack on the go or even a snack "I'm watching netflix and too lazy to make something". Either way, I am kind of obsessed with Sweet Mini Peppers.  Generally, they are my go to add of bright orange, red, or yellow color to my salads but I have been known to nosh on them in between meals. Now, stuffed peppers in general are ... Continue Reading

Blueberry & Beet Bruschetta

This recipe was semi inspired by a recent trip to the Mad City Vegan fest and semi inspired by my love of blueberries that are currently in season.  At the Vegan fest my mom and I got to watch Chef Dave from Lilliana's and Charlie's restaurant in Madison, Wisconsin do a live cooking demo. Not only was this a cooking demo...it was a vegan cooking demo. We got FRONT ROW seats because I didn't want to miss one second. I learned soooooo much.....and I laughed even more. He was truly good enterta... Continue Reading

Smoky Sweet Potato and Kale Dip

Without a doubt barbeque is one of the most recognizable flavors in the world. Smoky and sweet with a unique kick to the taste buds. It sends memories of burgers, picnic tables, pool parties, cook outs racing through peoples heads. In general, barbeque is a reminder of good times with friends or family. Usually BBQs are full of grilled "meat" and other unhealthy stuff. For us vegans though...we get creative with grilled veggies, fruits, tofu, homemade veggie burgers or even try the new ... Vegan Summer Borscht with Home Fries

Summa...Summa...Summatime! It's beginning to look a lot like...SUMMER!!! Yes...scorching heat is upon us and although we would have all preferred a smoother transition. Global warming is real and we get what we caused...grr. Anywhoo....summer weather always takes me back to my childhood. Filled with pool sessions everyday, jump roping, sleeping till noon, library book clubs and just overall FUN! So of course...we were still fresh immigrants when I was a kid so most of the things I ... Continue Reading
