Chickpea Minestrone

The rain...the cold...the darkness. Those things all scream "SOUP WEATHER" to me. I personally love soup. I think "Faux" meatballs are pretty cool. Cute, (usually) flavor packed and perfectly portioned. Which means you can gobble up 15 without noticing lol. Veggie meatballs and their close cousin falafels are a great addition to any meal. Mini Seitan Pita Pizzas

So I wanted to do a recipe on making seitan....and I did...but seitan isn't pretty to photograph or display unless you do something with it. So....Mini Seitan Pita Pizzas were produced on a whim!
