The first time I tried Bread Pudding, I fell in love.
It is such a simple dessert but absolutely delicious. I remember, I was at an Italian restaurant a decade ago and I saw it on the dessert menu. This type of dessert is not common for Russians so of course I have never had the opportunity to try it. I decided on a whim to go for it because I did recollect hearing about it. I never had an interest in trying it because well it doesn't "sound" like the best dessert you could have.
Inspired by Trader Joe's Organic Pumpkin Spice Granola Bark, this is my version adapted and of course...enhanced.
My mom had sent me a picture of TJ's version on instagram and I was immediately in awe. I HAD TO TRY IT!!! I love granola....like....LOVEEEE and well duh...CHOCOLATE who doesn't love that. I knew these would be gone before I had a chance to bring them home. So I solved that problem by creating a homemade version.
Same spicy flavor...Kicked it up a Notch!

When these guys come into season, I load up as much as possible and binge till my little belly is popping.
Actually....I basically do that to all fruits when they come into season because....well...I love FRUIT!!
I wanted to create a dish that would incorporate my love of cherries and my love of chocolate....BUT still be sort of healthy. Yea....chocolate doesn't usually scream healthy but when you add some good old oatmeal and fruit then it's okay right??? ...
I take my dessert seriously.
To be specific...I take my weekend ice cream bowls very seriously.
I work out and I eat clean whole plant based food 90% of the time but I treat myself to extravagant desserts on the weekends. I blend up a big bowl of frozen banana ice cream....(sometimes I add cocoa for chocolate flavor) and I literally....go bananas with toppings. Some of my favorite toppings are chopped dates, peanuts, almond butter, cookies, granola, craisins and cereal......hmmmm. ...
The inspiration for this French Toast came from my love of Ginger Chews....

They are so zesty and sweet. Like a pleasure and pain sort of relationship. Such a fascinating combination of flavors. The caramel prolongs your enjoyment due to the immense amount of chewiness and the ginger perks you RIGHT UP!!!
