Easy Lentil Buckwheat Pilaf

Although I love creating a fancy shmancy hard to prepare meals, most of my go-to meals are quick, simple and consist of ingredients that are always in my pantry. Buckwheat is a staple in the Russian household. It is definitely our go to "grain". I forgot about how much I loved Buckwheat when I was away at college but I reconciled my relationship a couple of years ago. It isn't very calorie dense but it is packed full of nutrition. The other brother in this recipe is the highly sought a... Continue Reading

Chocolate Thumbprint Cookies

In general, chocolate is hard to say no to and these soft and chewy cookies will grab you before you even have a chance to escape. The cookie portion is soft and tender on the inside with a gentle but firm crust. The Coconut Cashew filling finishes off the ensemble with a sweet flavor resembling an Oreo cookie cream. All vegan but without the added preservatives. This "open faced" Oreo cookie will be a hit in your household!   Continue Reading

Mediterranean Quinoa Stuffed Mini Peppers

Sweet....Mini....Baby....Bitesize..... Whatever you call these little nuggets, they not only are perfectly savory and sweet but they are super convenient. Perfect for a snack on the go or even a snack "I'm watching netflix and too lazy to make something". Either way, I am kind of obsessed with Sweet Mini Peppers.  Generally, they are my go to add of bright orange, red, or yellow color to my salads but I have been known to nosh on them in between meals. Now, stuffed peppers in general are ... Continue Reading

Watermelon Hibiscus Sparkler

It is the peak of summer and all I want to do is bask in sun rays all day. Fortunately or unfortunately...there is always business to be done so the basking of rays will be reserved to my weekend runs to the gym. Sigh... Apart from my want of more sun rays....another want of mine in the summer is watermelon. I devour these big guys on a weekly basis nowadays and I can't get enough. Each week, I challenge myself to finding the biggest and juiciest melon and to date....I have not been ... Continue Reading

Immune Boosting Salad

Blah... As I child, I was sick often. My immune system was terrible and I basically lived from cold to cold. My family attributed my weakened immune system to the proximity of my place of birth (Minsk, Belarus) to the Chernobyl Power Plant Explosion. No direct radiation poisoning, we assume the affected crops indirectly caused several of my health problems. As a result of my immune system, I have spent the beginning portion of my adult life strengthening it to the levels of wolverine or ... Continue Reading

Blueberry & Beet Bruschetta

This recipe was semi inspired by a recent trip to the Mad City Vegan fest and semi inspired by my love of blueberries that are currently in season.  At the Vegan fest my mom and I got to watch Chef Dave from Lilliana's and Charlie's restaurant in Madison, Wisconsin do a live cooking demo. Not only was this a cooking demo...it was a vegan cooking demo. We got FRONT ROW seats because I didn't want to miss one second. I learned soooooo much.....and I laughed even more. He was truly good enterta... Continue Reading

Lentilettes

I think "Faux" meatballs are pretty cool. Cute, (usually) flavor packed and perfectly portioned. Which means you can gobble up 15 without noticing lol. Veggie meatballs and their close cousin falafels are a great addition to any meal. Eat them as an appetizer with a marinara sauce or mix it in the sauce and plop them on top a bed of garlic spaghetti. PERFECTION! Honestly...the meal combinations are endless. There are several ways to make veggie meatballs but I found that the method ... Continue Reading

Smoky Sweet Potato and Kale Dip

Without a doubt barbeque is one of the most recognizable flavors in the world. Smoky and sweet with a unique kick to the taste buds. It sends memories of burgers, picnic tables, pool parties, cook outs racing through peoples heads. In general, barbeque is a reminder of good times with friends or family. Usually BBQs are full of grilled "meat" and other unhealthy stuff. For us vegans though...we get creative with grilled veggies, fruits, tofu, homemade veggie burgers or even try the new ...
