Chickpea Minestrone

  1. Heat up olive oil in a large pot. Add in minced garlic and cook for 1 minute.
  2. Add celery, onion, carrots and zucchini into pot. Stir vegetables and cook for 5-10 minutes.
  3. When the vegetable have started to become tender add crushed tomatoes, red wine and spices. Cook for another 5 minutes.
  4. Add vegetable broth and bring to a boil. For a thicker soup add less broth and vice versa.
  5. Once the soup is boiling add pasta and cook for 10 minutes.
  6. Finally, add in chickpeas, parsley and spinach. Cook for 5 minutes.
  7. Serve and Enjoy!
