I have long been a fan of popcorn. It is my go to snack even when I am not in the movies. Of course, popcorn tastes better with tons of butter but I try and limit that version EVEN if it’s now vegan butter lol. I do however love sprinkling tons of nutritional yeast on top to give the popcorn an addicting cheesy flavor.

My coworker recently brought me up a souvenir popcorn kernal bag from South Carolina. SOOOOO tempting….but I also had a random bag of vegan marshmallows I had bought a week prior. I knew I wanted to use both but there was something missing….

Enter in PEANUT BUTTER!!!!

Yes, the addition of peanut butter made the recipe come together in a new form of the classis Fluffernutter sandwich. Now, I don’t think I have ever eaten one of these during my childhood or even my prevegan adult years but of course I have definitely heard of such a fun name. FLUFFERNUTTER….so silly!!

These nuggets of fluffernutter are too good to resist. I can attest as I had to make 3 batches because they were so highly praised and addicting. They aren’t overly sweet but not bland AT ALL. Full of chewy gooey marshmallows and crunchy peanuts, these popcorn balls are perfect for a dessert or a holiday gift.

Instructions
  1. Heat a large/wide pot. Melt coconut oil and heat for 15-30seconds.
  2. Drop in popcorn kernels and salt. Swirl pot around to ensure all kernels are covered. Kernels should start popping after 30-60seconds. Continue until the timing of the pops have slowed down to 8seconds or so.
  3. Pour popcorn into a wide mixing bowl and set aside.
  4. To prepare marshmallows, heat a double boiler or use two pots that can fit inside the other. Bring water to boil.
  5. Melt butter and add in marshmallows. Stirring occasionally cook for 10-15 minutes or until marshmallows have have formed one melty substance.
  6. While the marshmallows are melting, microwave peanut butter and maple syrup in the microwave for 30 seconds. Stir and pour over popcorn.
  7. Mix popcorn thoroughly to ensure peanut butter coverage.
  8. Once the marshmallows have melted, pour over popcorn and mix until all the popcorn is sticky but malleable.
  9. Add in peanuts in the end and mix together.
  10. Using cooking spray/butter/oil grease your hands. Form balls with the fluffernutter popcorn and place onto a parchment lined baking sheet. Make sure to really squish them together so that the peanuts have a better chance of sticking.
