Heat a large/wide pot. Melt coconut oil and heat for 15-30seconds.
Drop in popcorn kernels and salt. Swirl pot around to ensure all kernels are covered. Kernels should start popping after 30-60seconds. Continue until the timing of the pops have slowed down to 8seconds or so.
Pour popcorn into a wide mixing bowl and set aside.
To prepare marshmallows, heat a double boiler or use two pots that can fit inside the other. Bring water to boil.
Melt butter and add in marshmallows. Stirring occasionally cook for 10-15 minutes or until marshmallows have have formed one melty substance.
While the marshmallows are melting, microwave peanut butter and maple syrup in the microwave for 30 seconds. Stir and pour over popcorn.
Mix popcorn thoroughly to ensure peanut butter coverage.
Once the marshmallows have melted, pour over popcorn and mix until all the popcorn is sticky but malleable.
Add in peanuts in the end and mix together.
Using cooking spray/butter/oil grease your hands. Form balls with the fluffernutter popcorn and place onto a parchment lined baking sheet. Make sure to really squish them together so that the peanuts have a better chance of sticking.
