Pumpkin Tahini Dressing
Instructions
  1. Heat a large pan. Drizzle olive oil. Mix in minced garlic and cook for 30seconds.
  2. Add red onion and cook for 2-3minutes.
  3. Add carrots and cook for 3-5minutes.
  4. Slowly add in shaved brussels sprouts. Mix everything together and cook for another minutes or until the sprouts have started to soften.
  5. Turn off heat and mix in prunes. Spoon everything into a large mixing bowl.
  6. Whisk together all dressing ingredients. Alter almond milk amount to the preferred thickness of dressing.
  7. Pour dressing over salad and mix everything thoroughly. Serve warm!
