Vegan Thanksgiving Nachos

A lot can be said about Thanksgiving, some good and some bad. For the majority it is a National “Holiday” where people enjoy the day off with lots of food, family and friends.

This year however, will be a little different celebration. To me, Thanksgiving is no longer a “normal” holiday it is actually my Vegan Anniversary. Yes, one year ago was my last small sliver of meat. WOOOHOOO!! Yes, I am alive and thriving!

This year we will be having an all Vegan Thanksgiving and it will be amazing. A celebration for our health, the animals and the environment!!

Anywhoo…although I won’t be serving these Nachos at Thanksgiving they sure have been enjoyed several times these weeks leading up. I mean…who only wants to enjoy the flavors of Thanksgiving one or two days. NOT ME!!!

From the savory flavors of the green beans and potatoes to the sweet flavors of the cranberries and sweet potatoes, the aroma puts you in a nostalgic state of mind. I wanted to extend my nostalgia and revel in the splendor of this holiday without needing to cook a feast and spend hours in the kitchen.

These Thanksgiving Nachos are ALL the flavors of Thanksgiving in a compact and quick fashion. All of the bases are covered, even down to the “meat-less” Chik’n representative of the Turkey.

The golden and gooey cheese sauce is Sweet and Savory and envelops the tortilla chips. A sweet potato casserole has never tasted so good.

Sweet Potato Cheese

Instructions
Sweet Potato Cheese
  1. Boil sweet potatoes for 8-12minutes or until tender.
  2. Place sweet potatoes, nutritional yeast, cinnamon, sugar and 1 cup milk into blender. Blend for 2-3minutes until smooth. Add more milk until a thick liquid consistency is obtained similar to "nacho" cheese.
Cranberry Salsa
  1. Combine all ingredients in a blender. Pulse 5-10times until a chunky consistency.
  2. Place in fridge to "marinate" until the rest of the nachos is complete.
Base
  1. Heat up a pan with some olive oil. Drop potatoes onto the pan and season with a sprinkle of salt and rosemary. Mix together to ensure proper coating. Cook for 5minutes.
  2. Add Quorn Chikn Tenders to the potatoes and cook for 5-8minutes.
  3. Once the tenders are no longer frozen and have begun to warm and crisp up, add the mushrooms, green beans, parsley, rosemary, salt and pepper. Mix everything together and cook for 5minutes. Taste test to ensure proper seasoning.
Assembly
  1. Head up sweet potato cheese in sauce pan if cooled.
  2. Spread tortilla chips onto big plate or large baking pan.
  3. Spoon base (chikn, potatoes, green beans mushrooms) onto the tortilla chips in varying amounts.
  4. Spoon or pour sweet potato cheese over tortilla chips and base ingredients.
  5. Top with varying amounts of dried stuffing croutons and fried onion strings.
  6. Finish by spooning cranberry salsa on top.
  7. Serve and Enjoy!
